


Abbie's favourite squash by far - also known as the Hokkaido or onion squash. It's super versatile - and amazing in curries. You also don't have to bother peeling it! See below.

Cooking Tips (enjoy the skin if eating in chunks!)
Roast in chunks (half it, scoop out the seeds, chop into chunks or big slices, drizzle in olive oil and season, and roast at 180 for 30-40 minutes tops, depending on size.
Curries - as above, half - scoop out seeds - chop - and add to a curry and simmer for 30-40 minutes.
Red Kuri Squash soup - super creamy and a little sweet: I haven't tried to make a soup with skin on, but it WOULD be very good for you!
