About our Red Kuri Squash (Organic)

Abbie's favourite squash by far - also known as the Hokkaido or onion squash. It's super versatile - and amazing in curries. You also don't have to bother peeling it! See below.

Cooking Tips (enjoy the skin if eating in chunks!)

Roast in chunks (half it, scoop out the seeds, chop into chunks or big slices, drizzle in olive oil and season, and roast at 180 for 30-40 minutes tops, depending on size.

Curries - as above, half - scoop out seeds - chop - and add to a curry and simmer for 30-40 minutes.

Red Kuri Squash soup - super creamy and a little sweet: I haven't tried to make a soup with skin on, but it WOULD be very good for you!

  • Make an easy curry paste and fry for 5 mins on a low/med heat (oil, onions, garlic, mustard seeds, curry powder, a teeny bit of sugar)
  • Roast the kuri squash as above
  • Blitz all together, and add some salt and a lil squeeze of lime at the end.
  • Add extra turmeric and ginger for health points!
