This dish is super easy and quick - and brings a little brightness and colour to any meal.

Ingredients:

  • 200g (approx) French/green beans - trimmed but left long.
  • Glug of oil - we love EV Olive oil, always!
  • Half an onion, chopped
  • 2 Cloves Garlic
  • Handful of cherry tomatoes, halved
  • Chilli Flakes, or fresh chilli (optional)


Directions:

  • Heat the oil in a wide pan (with which you have a lid) on a medium heat.
  • Add the cherry tomatoes and onion, with a pinch of salt (and chilli if you like). Stir often for around 5 minutes.
  • Add the garlic, and stir as this cooks for a further 30 seconds. Be careful not to let it burn, the tomato juice should help.
  • Add the beans, stir, pop on the lid, and cook until the beans a tender. Be sure to stirr every couple of minutes. If the pan becomes dry, add a little more oil.
  • Season to taste.
