
Ingredients
2 Cobs of Sweetcorn
Smoked Paprika
Garlic Powder/granules
Onion Powder (optional)
Chilli flakes
Honey
Oil
Salt & Pepper
Coriander leaves (optional, to serve).
Method:
Preheat oven to 200deg.
Remove husks from sweetcorn.
Cut both ends of sweetcorn off to create a flat bottom to chop down into.
Cut Sweetcorn into half (sideways) and then into quarters (lengthways). (One cob should make 8 ribs)
Rub the sweetcorn in 1-2 tbsp of oil of your choice, and around 1 tsp of each spice plus a little salt and pepper to taste.
Place in the oven on a baking tray and roast for 10 minutes. Turn over, and roast for a further 10-15 minutes until starting to crisp on the ends.
Whilst these are cooking, mix together 2 tbsp of honey, with a sprinkle of salt and a shaking of chilli flakes. The spice level is personal preference, so taste as you go. Some chilli flakes can be VERY hot.
Once the ribs are cooked (they'll curve in the middle), serve with a drizzle of your hot honey, some coriander leaves and enjoy.
