Super easy and satisfying recipe - I love to add sriracha to mine and serve with some stir fried rice and veggies.

Ingredients

  • 2 aubergines
  • 2 tablespoon white miso
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup or honey
  • 2 tablespoon hot water
  • Coriander, sesame seeds and spring onions to garnish (optional)


Method:

  1. Preheat oven to 200ºC
  2. Mix all the glaze ingredients (including hot water) in a bowl until well combines
  3. Slice the aubergines in half lengthwise, and again - so into long quarters. Score the aubergine quarters to make deep criss cross cuts (but not all the way through!)
  4. Using a brush, cover the aubergines in the glaze. Be sure to get the glaze right into the cuts. Save a couple of teaspoons to use later.
  5. Cover a baking tray in baking paper, and lay the aubergine slices on it scores up. Bake for 30-40 minutes.
  6. Once ready, drizzle a little extra glaze and add the coriander and/or spring onion garnish - don't forget the sesame seeds!
