Patty Pans are a summer squash - meaning they're a little more courgette in texture than a dense winter squash.

They can be fried, sauteed, grilled - but our favourite (and easiest!) way to cook them is in the oven, roasted.

Ingredients
1-2 Patty Pan Squashes
2 tbsp Extra Virgin Olive Oil
Salt & Pepper
2 Cloves Garlic, minced or grated
Handful of your favourite herbs (or a teaspoon of dried)

Method

  1. Preheat oven to 180 deg, chop stems off squashes and chop into 1 inch chunks or slices
  2. Coat the squash chunks in olive oil and seasoning. If using dried herbs, add now.
  3. Roast until golden, around 20 minutes. Add garlic and fresh herbs, and toss again.
  4. Roast for another 5 or so minutes, until garlic is golden and fragrant.


Serve with: salads, other roasted veg, any protein you fancy, whizz into a soup, some sriracha mayo... the possibilities are endless!
