What's better than a new season potato? One crisping at the edges with more surface area for butter of course!

Here's how to make super easy smashed new potatoes - bonus points if you make them with our Jersey Royals.

Ingredients:

  • Small potatoes - around 10 for 2 people (or double up!)
  • Olive Oil
  • Seasoning of your choice - try cajun, basil, or whatever fits your meal!


Directions:

  • Preheat the oven to 200C and line a baking tray with parchment paper.
  • Wash your potatoes (if needed) and boil until tender (usually around 10 minutes depending on size)
  • Drain the potatoes and let them steam dry.
  • One by one, add a potato to the lined tray, and use a glass or tumbler to firmly press down on each potato. Spread them out so they don't touch.
  • Drizzle with a little olive oil and seasoning of your choice.
  • Pop in the oven until crispy - 15-25 minutes tops.
