Easy and slow, exactly how autumn winter recipes should be.

Ingredients
1 celeriac, washed and root end partially sliced off to make a flat bottom
1 bulb of garlic
A few sprigs of rosemary and thyme
Olive Oil
Seasoning

Method

  1. Preheat oven to 160 deg C
  2. Take celeriac, dry off and rub with olive oil until coated
  3. Lay out a large piece of tin foil, place the celeriac in the centre, break up the bulb of garlic and sprinkle on the celeriac (some on top, some round the sides) along with the herbs.
  4. Wrap the foil around the celeriac parcel and roast in the oven for 2.5 hours
  5. Unwrap, slice the top of the celeriac off, mash in some butter along with the herbs and some seasoning, and squeeze out the garlic into the middle too.
